Get these Ingredients
Flour, corn flour, curd, ghee, sugar, saffron, powdered green cardamom, baking soda, sunflower oil, rose essence, and edible food color.
Take all those ingredients in the following quantity
for 10 servings:
- 3 cups all-purpose flour
- 2 cups curd
- 1/2 cup ghee
- 3 cups sugar
- 5 strands saffron
- 1/2 teaspoon powdered green cardamom
- 1/2 cup corn flour
- 1 1/2 pinch baking soda
- 2 cups sunflower oil
- 3 cups water
- 4 drops of rose essence
- 1/2 teaspoon edible food color
Steps
- Mix all-purpose flour, cornflour, and baking soda in a bowl.
- Add ghee and food color to the above mixture and mix well.
- For thick batter, add curd and water, and mix well until it is thick but has a slightly flowing consistency.
- Keep it aside for 8-10 hours to ferment.
- Heat oil in a pan over medium flame for deep frying.
- Fill the Jeri batter in a muslin cloth and pierce a small hole in the cloth. You can use a squeezy bottle (ketchup bottle with a small nozzle on top).
- Squeeze the muslin cloth to make concentric circles.
- Fry the Jeri on both sides until crispy in texture and golden in color.
- Make the sugar syrup by heating water and adding sugar, saffron, cardamom powder, and rose essence. Stir well to prepare the final sugar syrup.
- Soak the Jeri in warm sugar syrup for 3-4 minutes. Don’t soak for too long to maintain crispiness.
